Core and slice strawberries. Remove lemon rind, and cut into thin slices.
Lightly bruise mint leaves by placing them in the palm of one hand and lightly clapping. This will release the natural mint oils for a more aromatic infusion.
In a 1-liter pitcher, combine strawberry, lemon, and mint. Fill with filtered water and add ice to chill.
Let sit in the refrigerator for at least two hours. Strain and serve.
If keeping for a longer time, strain fruits and mint from the water before 24 hours have passed. Be careful not to steep for too long.
